I receive a lot of questions about what the best cookbook is. Answering that would be like asking me over the phone what kind of hat you should wear. The answer will always be different, depending on your cooking ability and your personal likes and dislikes.

First and foremost, you want to look at the author's credentials. Who is he or she? Where did the author come from? What kind of training does he or she have? You want to make sure the writer knows what he or she is talking about.

Next, look at recipes you're familiar with and see how they compare to the ones you like to use. Also make sure the recipes are easy to read and understand. …
