* Delightful dining experience includes the feeling of being pampered

It's always exciting to uncover a gem where you least expect it. And that's exactly what we found on a Friday sisters-night-out jaunt to the village of Galisteo, about 20 miles southeast of Santa Fe: an inventive menu with unexpected creative twists, impeccable service and a cozy crowd assembled before the roaring fire in the tastefully appointed eight-table dining room of this traditional Territorial style adobe.

The last time I dined at The Galisteo Inn a sleepy, cottonwood shaded hacienda-cum-B&B on eight scenic acres housing llamas and a duck pond my savvy dinner friends and I found it to be charming but overpriced and largely unspectacular. Though vacationing at the inn, we shifted our focus to the wonderful and nearby Vista Clara Ranch Resort & Spa, the only other Galisteo dining option.

So I wasn't exactly thrilled to be schlepping out to The Galisteo Inn for another ho-hum evening.

But, oh how times have changed! The Inn has a new owner, 30-year Galisteo resident Chris Griscom. …
