* United Way of Santa Fe County benefit kicks off July 4th holiday with breakfast on the Plaza

What did it take to feed pancake breakfasts to an estimated 7,000 to 10,000 Fourth of July revelers who were on the Plaza Friday?

For starters, try 2,500 pounds of batter, 100 pounds of coffee and 1,000 pounds of ham.

And for just one of the three pancake tents set up around the Plaza -- one red, one white, the other blue -- officials needed 3,500 paper plates, 3,500 coffee cups, 3,500 juice cups and 6,000 single-serve syrup packages, according to an order sheet.

And don't forget the 450 to 500-odd volunteers, who come back year after year for Pancakes on the Plaza, a United Way of Santa Fe County benefit that brings tourists and locals together to celebrate Independence Day, Santa Fe style. …
