Woman concocts her own version of ice cream that fits popular diet's rules

Miranda McLaughlin was surprised when she saw ice cream listed on the Atkins program. It made losing those 40 pounds in the last year seem even sweeter.

The idea that she could maintain her weight loss and have ice cream, too, was enough to make McLaughlin want to investigate.

Her problem, however, was that the Atkins recipes seemed too complicated. The ones McLaughlin found required eggs, which means thinking ahead -- cooking a custard and then refrigerating it overnight before you make the ice cream.
