4 Asian eateries spring up.(Business Outlook)

Albuquerque is in the middle of an Asian restaurant renaissance this spring. Four new family-owned Asian restaurants have begun serving recently -- or will begin serving soon.

One is Vietnamese, one is Thai, one is Chinese and the other is Indian or, more accurately, ayurvedic.

First, there will soon be two locations of the Annapurna Ayurvedic Cuisine and Chai House. The new restaurant is expected to open in early July within walking distance of the University of New Mexico at 2201 Silver SE at Yale. It takes over the space from Cameron's, which closed recently.

Ayurvedic cooking is a 2,000-year-old system of health that prescribes a vegetarian diet of fresh, organic vegetables and grains, avoiding white sugar, eggs, cheese and extremely hot or cold food. …
